Why I made this salad!

Today, I want to share a little about my journey to heal my brain. 
 
On November 30, 2020 I suffered what appears to be an aneurism in the back of my head, most likely caused by a weakening of an artery due to a previous head injury.  Personally, I think it was cause by the high-trans fat chocolate cake I was over-indulging upon :-) !  
 
For one month, I was unable to do much due to severe headaches in the back part of my head. Then, one night, I felt the touch of fingers (angelic fingers I believe) on the back of my head where the injury was and the next day I awoke without pain!  Thank you HaShem!   
 
Subsequently, I would have intermittent bouts of pressure & light pain but felt that my head was in a "healing process."  However, I consistently noticed that if pain did occur it was usually connected to eating one of three things: gluten, sugar, or high fat.   
 
To put this in perspective.  The night of the incident I had a full, never opened, bottle of 800 capsules of Tylenol.  As of today, there are 4 left in the bottle.
 
Even though I was, for the most part, avoiding foods that would trigger head pain, I knew there was more to be done!  So, I turned to my favorite functional doctor, Joel Fuhrman (I will write more on his approach in another blog post).

Personally, salads are not my thing and never have been.  Healthy eating? Yes, I love to eat healthy but not with the staple of salads.  Learning that I needed to eat at least 5 cups of raw greens per day, was challenging to say the least!  Until I saw Geoffery Allen prepping for his daily salads while sharing his story on how he lost 30 lbs in 3 months!   Here is the link if you want to watch it! 
 
Since starting to incorporate 1-2 large salads into the daily menu, the swelling in the back of my head has almost disappeared.  And definitely no need to take Tylenol!
 
The salad you see in the picture is 2-4 meals worth of salad, depending on what other foods (like my favorite mushroom tacos) is accompanying  it!  
 
One thing is for sure, learning to make and incorporate a proper salad into my daily meal plan is noticeably helping my brain fully recover.  There is a lot of science to back this observation, and now a personal testimony is in the making too!  
 
What's in the salad?
 
The bottom layer is arugula, then a romaine mix with carrots and cabbage, then sprouts, roasted sweet potato, avocado, green lentils, onions, mushrooms, and black olives. My dressing is a mixture of balsamic vinegars, white truffle olive oil (only 1 tsp for flavor), and 1/2 lemon.
 
Oh and if you want to enjoy the salad with something super delicious, try this healthy Banana Muffin recipe! 
  • 4 bananas,
  • 1/2 C of almond butter,
  • 2 eggs,
  • 1 tsp of baking soda,
  • 1 tsp of vanilla

Mix it together in a bowl or food processor, our into a coconut or olive oil greased muffin pan and bake at 375 for 12-15 minutes!  Enjoy!
